Directions:

STEP 1

Combine Coca-Cola, soy sauce, and mirin in a bowl.

STEP 2

Finely mince garlic and ginger. Add this mixture to the liquids and whisk.

STEP 3

On a cutting board, cut chicken thighs into 1-inch by 1-inch cubes. If you choose to use beef, trim the fat and cut into 1-inch by 1-inch cubes.

STEP 4

Place chicken (or beef) in half of the marinade mixture and cover with plastic wrap or secure in a container with a tight lid.

STEP 5

Let chicken marinate in the refrigerator for two to four hours.

STEP 6

Add brown sugar to the remaining marinade mixture (that was reserved and hasn’t touched the meat).

STEP 7

Cook the brown sugar and marinade mixture in a small sauce pot over medium heat until it has reduced by half. Set aside.

STEP 8

Pre-heat grill or indoor grill pan to medium heat.

STEP 9

Remove the meat (chicken or beef) from the marinade and place 4-6 pieces of chicken on bamboo skewers.

STEP 10

Grill skewers on medium heat of a grill or indoor grill pan for 2 minutes on each side.

STEP 11

Make sure chicken reaches an internal temperature of 165°F and finish cooking in the oven if needed.

STEP 12

Using a pastry brush, brush the Coca-Cola glaze onto the skewers and sprinkle with sesame seeds.

STEP 12

Serve immediately and enjoy!

Tips:

  • Make sure to purchase boneless skinless chicken thighs
  • Skirt steak or ribeye would work best if you choose to use beef
